INGREDIENTS & DIRECTIONS:
Quick and easy. 1 pkg. vanilla cook & serve Jello pudding mix 1 c. fresh unsweetened coconut 1 pkg. D-zerta or lo-cal topping mix
Lightly brown coconut in heavy skillet. Prepare pudding mix according to package directions. Mix 1/2 cup coconut. Pour in pie shell. Add prepared pie topping mix and sprinkle with remaining coconut. Chill for several hours.
