Coconut Bar Cookies
INGREDIENTS:
1/3 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. sifted flour
1/2 tsp. baking powder
1/2 tsp. salt
1 c. flaked coconut
DIRECTIONS:
Cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla.
Sift together flour, baking powder and salt. Gradually add dry ingredients to creamed mixture, mixing well. Stir in coconut. Spread in greased and floured 8 inch square baking pan.
Bake in 350 degree oven 30 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack. Cut in 2 inch squares. Makes 16 squares.
