INGREDIENTS:
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. Libbys solid pack pumpkin
2 c. all-purpose flour, sifted
4 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. raisins
1 c. nuts, chopped
DIRECTIONS:
Cream shortening, add sugar gradually. Cream until light and fluffy. Add eggs and pumpkin, mix well. Sift flour, baking powder, salt and spices together. Stir in dry ingredients and mix until blended. Add raisins and nuts. Drop by teaspoonfuls on greased cookie sheets. Bake in 350 degree oven for approximately 15 minutes. Makes 4 dozen. May be frozen if desired.
