INGREDIENTS:
1/2 c. butter
1/2 c. brown sugar
1 c. walnuts (chopped)
1 3/4 c. flour
3/4 c. coconut
2 eggs
1/2 c. sugar
1 1/4 tsp. vanilla
1 1/2 c. (12 oz.) cream cheese
32 oz. cherry pie filling
DIRECTIONS:
Blend butter, brown sugar, nuts, flour and coconut until mixture is well blended and crumbly.
Spread 3 cups of crumb mix evenly into a well greased 9 x 13 inch pan for bottom layer. Pat down by hand into even layer. Set aside the balance of crumbs.
Bake at 350 degrees for 5 minutes. Beat eggs until frothy. Gradually add sugar. Beat until sugar is dissolved. Add vanilla and cream cheese. Mix until well blended.
Spread cheese mixture evenly over crumbs crust and bake at 350 degrees for 15 minutes. Remove from oven and spread cherry filling evenly over cheese layer. Sprinkle remaining 1 cup of crumbs and mixture evenly on top of cherry pie filling and bake at 350 degrees an additional 12 to 15 minutes. Cool. Cut into 24 squares. (Cut 4 x 6)
