INGREDIENTS & DIRECTIONS:
Mix together: 1/4 c. butter 1/2 c. peanut butter 1/2 c. sugar 1/2 c. brown sugar 1 egg
Sift together and stir in: 1/2 tsp. baking powder 3/4 tsp. soda 1/4 tsp. salt
Chill dough; roll into balls size of large walnuts; place 3 inches apart on lightly greased baking sheet. Flatten with floured fork or hit them lightly with floured notched meat tenderizer mallet (this makes a nice design). Bake until set, but not hard, at 375 degrees F. for about 10 to 12 minutes. Makes about 3 dozen cookies.
Note: If you have to make your own peanut butter, put the peanuts into the blender first and make the butter then in the same jar of the blender. Add the shortening, sugars, and egg. Then remove this mixture after blending and continue mixing by hand the dry ingredients. Or where peanut flour is available and you don’t have the butter, put the flour in the blender and add enough oil to make a butter. Continue as for making peanut butter. The flour doesn’t make quite as good a cookie, but serves as a very good substitute.
This type of peanut butter may also be used for making sandwiches of jelly and peanut butter. Mix it all together in the blender.
