Fortune Cookies

INGREDIENTS:
3 egg whites
3/4 cup sugar
1/8 teaspoon salt
1/2 cup butter — melted
1/4 teaspoon vanilla
1 cup flour
1 tablespoon instant tea powder
2 tablespoons water

DIRECTIONS:
Preheat oven to 350 degrees.
Combine ingredients in order, mixing well after each addition. Chill 20 minutes.
Make cookies 2 at a time. On greased cookie sheet, drop a spoonful of dough for each cookie. It is very important to spread dough very thin with back of spoon to about 3 inch diameter. Bake about 5 minutes or until edges are lightly brown. Working quickly, place a fortune** in the center of each cookie. Fold cookie in half enclosing fortune, to form a semi-circle. Grasp rounded edges of semi-circle between thumb and forefinger on one hand. Place forefinger of other hand at center of folded edge, and push in, making certain solid sides of cookie puff out. Place each cookie in small size muffin tin, open edges up, until cookie is set. Store in airtight container.
**Beforehand: Cut some paper into 2 inch x 1/2 inch strips. Type or write fortunes on them, to insert in cookies.

Gingerbread Fortune Cookies

INGREDIENTS:
3 lg egg whites
1/2 c white sugar
1 tb honey
1/4 ts salt
1 ts ground ginger
1 ts ground cinnamon
1/2 ts ground nutmeg
6 tb unsalted butter, melted and
-cooled; but still liquid
1/2 c unbleached or white
-all-purpose flo; ur

I have two fortune cookie recipes that I like. Here is one, which is
adapted from: _Gingerbread: 99 Delicious Recipes From Sweet to Savory_.

These are crisper than the traditional fortune cookie and also a lot
tastier.

Type out the fortunes, then cut each into a thin strip 4.5 – 5 inches long.
Preheat the oven to 325 F. Grease the baking sheets. Whisk together egg
whites, granulated sugar, and honey. Whisk in salt, ginger, cinnamon, and
nutmeg, then the butter. Beat or whisk in the flour just until mixed. Use
no more than a level tablespoon for each cookie or they’ll be too large.
Drop the cookies at least 3″ apart onto the baking sheet. Using the back of
a spoon or a butter knife, spread the cookies out to form even 3″-diameter
circles. Bake the sheets (5 or 6 cookies per sheet) at 5 minute intervals.
Bake 10 minutes until cookies are lightly browned around the edges. Remove
the sheet from the oven. Let the cookies cool on the sheet for about 10
seconds, until you can slip a spatula under one without tearing it apart.
You now need to work very quickly. Remove one cookie and place it top side
down on your counter. Lay a fortune across the center, sticking out on one
side. Fold the cookie over the fortune, then quickly push the ends of the
flat side toward each other to form the traditional fortune cookie shape.
Form the rest of the baked cookies, then place them on a rack to cool.

Fortune Cookies

INGREDIENTS:

1 egg white
1/4 c. sugar
1 tbsp. melted butter
1/4 tsp. vanilla
1/3 c. flour
Dash of salt

DIRECTIONS:

Preheat oven to 350 degrees. Mix in medium sized bowl the egg white and sugar. Add in the rest of the ingredients saving the flour for last.
Drop teaspoonfuls of batter onto greased cookie sheet. Only 4 cookies per sheet. Bake approximately 5 minutes. Remove cookies from sheet placing a fortune in the middle of each cookie then fold each cookie in half then in fourths. If cookie can’t be removed from the sheet replace in the oven for a few seconds to soften it.
