Chinese Fortune Cookies

INGREDIENTS:

2 eggs
1/2 c. flour
1/4 tsp. ginger
3/4 c. powdered sugar
1/4 tsp. salt
1/4 c. butter, melted

DIRECTIONS:

Beat eggs, add sugar. Mix remaining ingredients. Grease cookie sheets. Drop by spoonfuls and spread to 2 1/2 inches round. Bake at 300 degrees for 12 minutes. Remove 1 cookie at a time with spatula; leave rest in warm oven, working quickly before cookie hardens. Fold over clean pencil and slip pencil out, slip paper fortune inside of cookie. Fold in half again and let set in glass cup until cooled. Repeat with remaining cookies.

 

Patti’s Low-Cal Fortune Cookies

INGREDIENTS:

Flour
3 tbsp. butter, softened
3 tbsp. sugar
1 egg white
1/2 tsp. vanilla
DIRECTIONS:
Cut out fortunes; fold in half lengthwise, then crosswise; set aside. Grease cookie sheet. Dip rim of 3 inch cookie cutter or glass in flour; press 6 outlines firmly 1 inch apart on prepared sheet; set aside.In small bowl beat butter, sugar, egg white, and vanilla until well blended. Stir in 1/3 cup flour until well blended. With small spatula spread rounded teaspoonful batter in each outlined circle. Bake in preheated 400 degree for 4-5 minutes or until edges are lightly browned. Remove; place cookie sheet on rack.

Quickly loosen cookie with spatula; turn bottom side up. Place folded fortune in center. Gently fold cookie in half; hold edges together 3 seconds (count of 3). Grasp folded ends of cookie; place center of fold over rim of glass. Gently press ends down to bend cookie in middle. Cool. Repeat with remaining cookies. If cookies cool and become too brittle to fold, return to oven briefly to soften. Makes about 20.

Fortune Cookies IV

INGREDIENTS:

  • 1/4 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 egg white
  • 1 tablespoon water

DIRECTIONS:

  1. In a mixing bowl, stir together flour, sugar, cornstarch and salt. Add cooking oil and egg white; stir until smooth. Add water; mix well.
  2. Make 1 cookie at a time by pouring 1 tablespoon of batter on a lightly greased skillet or griddle; spread into a 3 1/2 inch circle. Cook over low heat about 4 minutes, or until lightly browned. Turn cookie with a wide spatula; cook 1 minute more.
  3. Working quickly, place cookie on pot holder. Place fortune in center of cookie. Fold cookie in half, then fold again over edge of bowl. place in muffin pan to cool. Repeat with remaining batter.
