Oatmeal Cookies

INGREDIENTS:
1 c. brown sugar (dark brown best)
1 c. white sugar (I use 1/2 c.)
1 c. shortening
2 eggs
1/2 tsp. vanilla
1 3/4 c. flour (1 c. white, 3/4 c. whole wheat)
1 tsp. soda
1/2 tsp. cinnamon
3 c. oatmeal (old fashioned 5 min. type best for chewy cookies)
1/2 c. chopped nuts OR 1 c. chopped dates OR sm. pkg. either chocolate chips or butterscotch chips (I add nuts and one other ingredient)

DIRECTIONS:
Cream first five ingredients. Blend next four dry ingredients and add. Add oatmeal and “goodies”. Drop by teaspoonfuls on greased cookie sheet. Bake at 350 degrees for 14 minutes. Makes 80 cookies.

Oatmeal Cookies

INGREDIENTS:
1 c. butter
1 c. shortening
2 c. brown sugar
2 c. white sugar
4 eggs
3 c. sifted flour
1 tbsp. salt
1 tbsp. vanilla
2 tbsp. soda
4 c. coconut
6 c. oatmeal

DIRECTIONS:
Melt butter and shortening. Add sugars and mix well. Mix rest of ingredients in order given. Roll in wax paper (6 rolls). Chill in refrigerator. Cut in slices and bake at 350 degrees for 10-12 minutes (longer for browner cookies).

Soft Oatmeal Raisin Cookies

INGREDIENTS:

1 c. raisins
1 c. sugar
1 c. shortening
2 eggs
2 c. quick oatmeal
1 tsp. soda
1/2 c. nuts, optional
2 c. flour

DIRECTIONS:

Cook raisins in one cup water; cool. Cream sugar and shortening. Add eggs, beat well. Add raisin mixture and other ingredients. Drop by spoonsful on cookie sheet. Bake about 10 minutes in 350 degree oven. Do not overbake.
