Oatmeal Drop Cookies

INGREDIENTS:

1/2 c. shortening
1 1/4 c. sugar
2 eggs
1/3 c. molasses
1 3/4 c. flour
1 tsp. each baking soda, salt & cinnamon
2 c. rolled oats (oatmeal)
1/2 c. chopped nuts
1 c. raisins

DIRECTIONS:

Mix shortening, sugar, eggs and molasses. Sift flour, salt, soda and cinnamon together and add to sugar mixture. Stir in oats, nuts and raisins. Drop by teaspoonful on greased baking sheet. Bake at 400 degrees for about 10 minutes or until browned. Makes about 72 cookies.

Oatmeal Cookies

INGREDIENTS:

1 c. raisins (soak 1 hour before using)
3 eggs
1 tsp. vanilla
1 c. brown sugar
1 c. white sugar
2 sticks butter
2 1/2 c. plain flour
2 tsp. baking soda
1 tsp. salt
2 c. oatmeal (old fashioned)
1 tsp. cinnamon
3/4 c. chopped nuts, optional

DIRECTIONS:

Cream together brown sugar, white sugar, and butter; add eggs and vanilla. Add remainder of ingredients and drop on cookie sheet. Bake 10 or 12 minutes in 350 degree oven.

Oatmeal Cookies With Everything

INGREDIENTS:

2 c. sugar
2 c. light brown sugar
2 c. shortening
4 eggs
2 tsp. vanilla
6 c. oatmeal
3 c. self-rising flour
2 c. chocolate chips (optional)
1 c. chopped pecans (optional)
1 c. raisins (optional)

DIRECTIONS:

Preheat oven to 375 degrees. Beat sugars and shortening. Add eggs and vanilla. Stir in remaining ingredients, one at a time. Spoon large balls onto greased cookie sheet. Cook about 10 minutes. Let stand on cookie sheet a few minutes before removing.
