Chocolate Pecan Cookies

Ingredients
1-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 cup white sugar
1 egg
1/2 cup chopped white chocolate
1/2 cup unsalted butter
1/2 teaspoon salt
1/4 cup packed brown sugar
1 teaspoon vanilla extract
1/3 cup chopped pecans

Preheat oven to 375 degrees. Blend sugar and butter together until smooth and creamy. Add the egg and vanilla; blend well. Sift together the flour, salt and baking powder; combine these ingredients with the creamed mixture. Add chopped white chocolate and nuts. Scoop dough out onto a cookie sheet. Bake at 375 degrees for about 5 to 10 minutes, or until golden brown on the bottom. Let cool slightly on the cookie sheet before removing or they will break.

Brown Sugar Squares

INGREDIENTS:
2/3 c. butter
2 c. brown sugar
3 eggs
2 3/4 c. self-rising flour
1 tsp. vanilla

DIRECTIONS:
Preheat oven to 350 degrees. Grease oblong pan. Melt butter and pour over brown sugar. Mix well. Beat eggs into mixture. Then add flour and vanilla. Pour into greased pan. Bake for 30 minutes. Cool in pan and cut into squares.

Oatmeal Cookie Recipe

Oatmeal Cookie Recipe

INGREDIENTS

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
raisins or nuts (optional)

DIRECTIONS

1. In a medium bowl, cream together white sugar, butter, and brown sugar. Beat in eggs one at a time, then stir in vanilla.

2. Combine flour, cinnamon, baking soda,and salt. Stir into the creamed mixture. Mix in oats. If you are using nuts or raisins, mix into dough, combining well. Cover, and chill dough for at least one hour.

3. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into balls, and place 2 inches apart on cookie sheets.

4. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Makes approx. 36-60 cookies, depending on how large or small you make them.
