Christmas Confetti Cookies

INGREDIENTS:

1 c. butter
1/2 c. granulated sugar
1/2 c. brown sugar, firmly packed
1 egg
1 tsp. vanilla
2 c. all-purpose flour
1 tsp. soda
1/2 tsp. salt
1 1/2 c. Quaker Oats (quick or old fashioned, uncooked)
2/3 c. finely chopped nuts
1/4 c. chopped red maraschino cherries, drained
1/4 c. chopped green maraschino cherries, drained

DIRECTIONS:

Beat together butter and sugars until light and fluffy. Blend in egg and vanilla. Add combined flour, soda and salt to butter mixture; mix well. Stir in oats, nuts and cherries. Shape dough to form 1″ balls; place on ungreased cookie sheet. With tines of fork, flatten to make criss cross pattern. Bake in preheated moderate oven, 350 degrees, for 12 to 15 minutes or until golden brown. Makes 4 1/2 dozen cookies. Can be frozen after baking.
