Diabetic Pumpkin Cookies

INGREDIENTS:

COOKIES:

2 c. sifted flour
1 tsp. each baking powder, soda and cinnamon
1/2 tsp. salt
1 c. each shortening, sugar, pumpkin
1 egg
1 tsp. vanilla
3/4 c. chopped nuts
1/2 c. raisins

Combine butter, milk and brown sugar in a saucepan and boil for 2 minutes, stirring constantly. Cool, then stir in powdered sugar and vanilla. Frost cooled cookies.

FROSTING:

3 tbsp. butter
4 tbsp. milk
1/2 c. brown sugar
1 c. sifted powdered sugar
3/4 tsp. vanilla

DIRECTIONS:

Combine and spread on cooled cookies.
