Burnt Sugar Pound Cake

INGREDIENTS:
1 1/2 c. Crisco
2 1/4 c. sugar
1/4 tsp. salt
3 c. sifted plain flour
1 tbsp. baking powder
6 eggs
3/4 c. milk
1 tsp. vanilla extract
1 tsp. lemon juice or extract

DIRECTIONS:
Beat Crisco and sugar until smooth and creamy; add eggs one at a time, beating well after each. Sift flour, salt, and baking powder together. Add alternately to egg mixture with milk. Add extract and beat thoroughly. Spoon into large 10 inch tube pan that has been greased and floured well. Bake 1 1/2 hours at 325 degrees.

BURNT SUGAR ICING:

1 1/3 c. brown sugar
2 tbsp. Karo syrup
1/3 c. milk
1/4 c. Crisco
1 tbsp. butter
1 box 4x sugar
1 tbsp. vanilla extract
1 tsp. maple extract

Place brown sugar, syrup, and milk in a small boiler and cook over low to medium heat until it forms a soft ball in water. Stir constantly. When this comes to a rolling boil, add Crisco and butter, cook 2 minutes. Remove from heat and add 4x sugar and beat well. Add vanilla and maple extracts. If mixture is too thick add milk as necessary to make a good spreading consistency.
