DELICATE SUGAR COOKIES CAMPBELL

INGREDIENTS:
1 stick butter, softened
1 stick butter, softened
1/2 c. granulated sugar (plus additional for coating cookies)
1 c. flour
1 1/2 c. quick cooking rolled oats (not instant)
Confectioners’ sugar for dusting the cookies

DIRECTIONS:
In a large bowl with electric mixer, cream together the butter, butter and 1/2 cup of the granulated sugar until the mixture is light and fluffy, beat in the flour and oats. Roll teaspoons of the dough into balls and arrange the balls 2 inches apart on an ungreased cookie sheet. Flatten the balls with the bottom of a small juice glass, dip in additional granulated sugar. Bake in preheated oven at 350 degrees for 12-15 minutes or until pale golden. Cool cookies and dust with confectioners’ sugar. Makes about 60 cookies.
