INGREDIENTS:
2 eggs, slightly beaten
1 cup Equal® Spoonful*
6 tablespoons unsalted stick butter or margarine, melted
1 teaspoon vanilla
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup toasted flaked coconut
1/2 cup chopped walnuts
1/2 cup seedless raisins
DIRECTIONS:
Beat eggs and Equal® in medium bowl. Mix in butter and vanilla. Combine flour, baking powder and salt; stir into egg mixture. Mix in coconut, nuts and raisins. Spread batter in lightly sprayed 8-inch square pan.
Bake in preheated 350 degrees F oven 18 to 20 minutes or until wooden pick inserted in center comes out clean and top is golden. Cool completely on wire rack.
