Sugar Free Carrot Squares

INGREDIENTS & DIRECTIOPNS:
For diabetic and low salt diets. 1 tsp. baking powder 1/4 tsp. cinnamon 1/8 tsp. nutmeg 1/8 tsp. salt or less 2-6 packets Sweet ‘n Low 1/2 tsp. vanilla 1/2 tsp. baking soda 1/2 c. + 2 tbsp. oil 1 lg. egg 1 c. grated carrots 1 c. golden raisins
Preheat oven to 350 degrees. Spray 8″ square baking pan with Pam. In medium size bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, salt and sweetener. Blend. Add oil to dry ingredients. Blend. Stir in beaten egg and vanilla. Add carrots and raisins. Mix thoroughly. Pat with back of spoon into pan.

Bake 30 minutes or until tester comes out clean. Edges should be slightly brown. Cool pan on rack and cut into 2″ squares. Keep refrigerated. One square equals 1 fruit exchange. I’ve used grated zucchini and like it better.
