Oatmeal Cookie Recipe

Oatmeal Cookie Recipe

INGREDIENTS

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
raisins or nuts (optional)

DIRECTIONS

1. In a medium bowl, cream together white sugar, butter, and brown sugar. Beat in eggs one at a time, then stir in vanilla.

2. Combine flour, cinnamon, baking soda,and salt. Stir into the creamed mixture. Mix in oats. If you are using nuts or raisins, mix into dough, combining well. Cover, and chill dough for at least one hour.

3. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into balls, and place 2 inches apart on cookie sheets.

4. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Makes approx. 36-60 cookies, depending on how large or small you make them.

Cinnamon Cookies

Ingredients

225g 8oz 2 cups self raising (self rising) flour
1/2 tsp 1/2 tsp 1/2 tsp bicarbonate of (baking) soda
1 tsp 1 tsp 1 tsp ground cinnamon
100g 4oz 1 st / 8tbsp butter
100g 4oz 2/3 cup soft (light) brown sugar
1 tsp 1 tsp 1 tsp lemon juice
1 tsp 1 tsp 1 tsp orange juice
1 1 1 egg, separated
2 tbsp 2 tbsp 2 tbsp caster (granulated) sugar

Method:

Sift the flour, soda and 1/2 teaspoon of the cinnamon into a bowl. Rub
in the butter, then stir in the brown sugar. Add the juices, egg yolk
and enough of the egg white to make a dough.
Roll out the dough thinly and cut into 5cm/2″ rounds. Place on greased
baking sheets. Brush with the rest of the egg white, lightly beaten.
Mix the white sugar with the remaining cinnamon and sprinkle on top.
Bake in a preheated moderately hot oven (190C/375F/GM5) for 15 to 20 mins.

Macadamia Nut Cookies

Ingredients:

2 cups of all-purpose flour.
2 cups of coconut flakes.
1 cup of butter, softened.
1 cup of confectioners’ sugar.
½ cup of chopped macadamia nuts.
¼ cup of finely ground macadamia nuts.
¼ cup of granulated sugar.
1 teaspoon of vanilla.
¼ teaspoon of salt.
Preparation Instructions:

Sift the flour, measure, then sift again with the salt. Set aside.

In a large bowl, cream the butter, then add the granulated sugar and cream again until blended thoroughly.

Add the vanilla.

Gradually beat sifted flour into creamed mixture until smooth.

Mix in the flaked coconut and macadamia nuts.

Shape the dough into a roll 1-½ inches in diameter and wrap in clear plastic wrap.

Refrigerate for at least 6 hours.

Slice the roll at quarter-inch intervals and place rounds on a greased baking sheet.

Bake at 300°F (150°C) for 20 minutes.

Sift the confectioners’ sugar onto waxed paper, reserving about 1/3 cup, and transfer baked cookies to it.

Sift the tops lightly with remaining sugar.

Allow to completely cool, before storing in cookie tins.
